
The Matcha Guru rub

This recipe is a versatile dry rub that can be applied to chicken pieces (breasts, thighs, or a whole chicken).
Ingredients:
1 tbsp Matcha guru Latte grade matcha powder
1 tbsp sea salt
1 tbsp brown sugar (or caster sugar)
1.5 tsp paprika
1 tsp ground black pepper
1 tsp dried thyme
1 tsp dried rosemary
1 tsp dried sage
0.5 tsp onion powder
0.5 tsp garlic powder
Instructions:
Combine ingredients: Mix all ingredients together untill evenly distributed.
Prepare the chicken: Pat your chicken dry with paper towels. For a whole chicken, you can loosen the skin and spread some of the rub (mixed with a little butter) underneath the skin for extra flavor.
Apply the rub: Generously rub the mixture over all surfaces of the chicken. (The gurus tip: Mix your rub with a tablespoon or two of Greek yogurt and use to marinate your chicken breasts, this keeps your chicken tender and juicy)
Refrigerate: For the best flavor penetration, let the rub sit on the chicken for at least 30 minutes, or up to 12 hours, in the refrigerator.
Cook: Proceed with your preferred cooking method, such as roasting, grilling, or baking, until the chicken is fully cooked (internal temperature of 165°F or 74°C).

Matcha pairs well with a variety of flavors, which can inspire variations of this rub.
Citrus: Lemon and lime zest can add a bright, zesty note that balances the earthy matcha flavor.
